By default our Linux Shared Hosting Plans on cPanel use PHP 7.1.
Withing cPanel you can use the PHP manager to change the PHP version per domain / subdomain. This option will allow you to select PHP 5.6, 7.1, or 7.2.
NOTE: PHP 5.6 is End Of Life (EOL) as of Dec 31, 2018. We will leave this version on our shared servers after that date pending there are no security holes / exploits released for it. If an exploit is released it will be removed from the servers very promptly and your account will be switched to PHP 7.1 as the default.
